What is the outside diameter of the 8" and the 7.5 " dish? Need to use it in a pressure cooker.

Those measurements are the outside diameter. My 7.5" dish fits nicely in my 6 quart Instant Pot electric pressure cooker, and I use it in there all the time.

Has anyone used this in an insta pot?

Yes, it fits and is safe. Be sure to make a foil sling to allow getting in out.

2. 16oz = 1 pint, 32 ozs = 1 quart, therefore 2.

How deep is this dish?

this dish is 6 X 3..... NOT 3.5 as I was led to believe by a previous answer..... really irked me....
